Having had tents, trailer tent, folding camper and now a folding caravan, I feel I can speak with some knowledge on this one.
I agree it only takes 15 mins to set up but the construction of ours (Rapido Orline) once erected is pretty robust. With a couple of stiffening pieces it may well be possible to safely tow ercted for short journeys (had occured to me too), however the lower side pieces may not have been designed to take the load of the sides vertical rather than horizontal, where the weight is more evenly spread over the chassis.
Having replaced some of the floor on ours I would say do not try it.
