Hi There, you may find that if you want a fridge etc in the kitchen that a folding camper may suit your needs better.
We too went from a f/c to a lovely caravan (which like you saw little use) then to a tent and now we are back to a f/c . We looked at t/ts but wanted the cooker to be in the unit rather than in the awning, depending on what one you go for then you can still have a cassette loo but if you go for a 4 berth then youd have to put it in the awning. We are going to get a tall annex for our awning and use that for the loo and clothing storage.
Again with the electrics, if it isn't already fitted then you can use an ehu with 3 sockets , we always take a t.v and satellite with us (sad i know) and you can use this to run any other electric items the same as you would have in a van.
