We too have the Atlantis deluxe. The largest bag of poles is for the main awning, and the second bag is for the porch awning. A lot of the poles are sprung loaded together, and they fit the main part of each awning. The other poles fit in off of them.
Zip the awning on first, and work outwards it is much easier that way, then you don't spend ages holding a very heavy half erected awning while your partner works out which of the other poles goes where (ask me how I know)
We put ours up for the first time this weekend, and I would say allow at least two hours to get everything up, we took two and a half and still didn't put the roof liners on, but you can get away with that for a weekend. ( It seems a long time, but it flies by)
If the previous owner colour coded the poles it should make life a little simpler for you, but take a step of some sort with you, or use a chair or something, as the awning is quite high in the middle.
Kitchen is quite heavy, but doesn't take much to move into it's place in the main awning.
The trailer is amazingly easy to move around and position into place, and I can guarantee that a lot of people will be interested in watching you, so hope you don't mind an audience!
All else I can say really is, it will take a while, you might get a little stressed, (take wine), good sleeping bags are a must, but it is totally worth it. Have fun!!
