BUT we have what looks like another internal bed cabin. (got one just fitting one and one that goes over the top fitted in there).

Is it a quite low one? If so it's an undertent. For hanging under a bed board.

We also have another set of poles with spikey bits built into a curve.

Curve as in clip? Is it a sort of "t" shape pole? If so, it's for the wardrobe. The spikey clip fits onto the side roof bar and you extend the pole so it fits neatly between that and the ground, t-section pointing into the wardrobe.

We have a bit of internal cabining we can't figure out... it has pole hooks, what looks like an external door with what looks like a heat-proof window, pole hooks on elastic and the look of internal about it.

It's the roof liner for the extension section. The heatproof side goes towards the cooker.  Inside there should be two narrow compartments...one for your bucket or portapotti, the other one for that wardrobe pole.

Bed cabin doesn't seem like an undertent, no groundsheet, it is hook hung etc.

Poles and bit could be a wardrobe, we'll give it a go a week on Saturday and see what we can figure out.

The other bit seems very skinny for a tent inner but we're probably doing it wrong.

Thank you very much! We'll post pics when we get a chance.
