I had a go a while back at producing a chart of the different electrical settings for Pennine campers:

The green columns are different options for when pitched and the red columns for when travelling. Where an entry is blank then it doesn't matter about the setting.

Note in particular that for travelling it doesn't matter what the Car/Van switch is set to. The battery will still be charged and the fridge cooled (provided the 12v red switch is on).
On sites without EHU where your leisure battery is running low, you can run the 12v systems from your car battery if your car is parked nearby. For Pennine campers you would need to make/purchase a 12S extension lead to allow the 12S cable to reach under to the hitch area.

Just to further confuse the matter - if I leave my switch in the middle (off) then it definitely does NOT charge the battery when we are plugged in on electric hook up.  We have to have our switch put to van or the battery will not charge. 

This is definitely correct (for our 2001 Pathfinder anyway) as we fell foul of this with a flat battery when testing the theory.
