You can't tell if canvas has been waterproofed. Untreated canvas works by the cotton fibres swelling when they get wet so that the water can't penetrate. Waterproofing works by a layer of silicon (or similar) sitting on top of the fabric to prevent the water seeping through.
The best thing you can do is pitch it and then wait for it to rain or get a gentle hosepipe on it to get any surface dirt off it. Any stubborn marks try and remove with a soft brush. Just use water no detergents. You will also find any areas where it might be leaking.
If it doesn't leak it won't need waterproofing (well cared for canvas can last for 30 odd years without being treated).
If it does leak then invest in a large tin of Fabsil or similar (£20 ish ) and one of the pump action sprayers (£10-£20 from a garden centre) much easier than using a brush.
Once it's been waterproofed you will have to re-do it every 2-3 years
