After purchasing our Pennine Fiesta in July which is fantastic best thing we ever did, in fact we can't stay at home on weekend the children love it we love it!! We just keep packing up and going.  So for our 3rd weekend away in a row we are running out of food ideas and I've got no idea why.  Just wondered if anyone can give some fresh ideas our way please so we can eat something different. Thank you.

One of the easiest things to do is burgers and sausages on thE BBQ, but that gets monotonous and isn't that healthy.

If you have a gas BBQ with a pan ( we use a Cadac carrie chef with the pan) you can cook easy great meals . Try fajita's , quick spaghetti bolognese, stir frys. You can easily get some pork pieces and cook them in a sauce with some rice, or flavoured cous cous
With a gas BBQ. , or the hob in the FC you can cook quickly and simply anything you would cook at home.

I always have a selection of packet flavours and jars of sauce in the fc cupboard. They do not go off and if I use one while away i just stock back up when home, that way all you ever need frsh is the meat and that can be taken with you or got locally. The sauces etc are often the hardest part to get in a corner shop and hence taking them with you.

Always take a cooked supermarket chicken and a bag of salad so you have a meal when you get there without doing anything.

For camping, boil-in-the-bag rice is a must. We too keep a stock of cook-in sauces in the camper, along with tinned toms / sweetcorn / peas / new potatoes / tuna.

There are two types of cooking we do when away. Which one we use depends on where we are going and for how long.

If we are "out in the sticks" where there is limited food shopping available, then we will take a couple of coolboxs full to the brim with frozen meals and freezer blocks and although, at home, we would microwave these, when away they are defrosted on a daily basis and oven cooked as necessary. The coolbox/freezer blocks, if opened only briefly, will keep frozen meals for about 4 days.

If we are somewhere where food shopping is good, then we like to eat fresh, locally sourced produce, especially if it is special to that area.
Camping in an area where the fish, poultry, meat, veg, grain and dairy products were living and growing around you days before you are preparing it for your evening meal is an almost unique experience in these days of high tec, factory prepared meals filled with dubious ingredients.

Camping gives us the opportunity to take our preferred lifestyle to the source of some of the best food in the world.

Chilli, spaghetti bolognaise, curry,stir fry, steak, we purchased a cheap mini oven nd can now have quiche, nuggets, garlic bread, part baked bread, pizza, breaded chicken/ fish even did a roast por dinner on our last holiday as we have a steamer too...most eats served with side alad and fresh bread. Generally we et similar to when a home.

Thanks everyone I don't know why I'm finding it a stumbling block probably because one of our children can't eat dairy, we mainly had bbq potatoes salad etc...

If you take a slow cooker you can do umpteen stews, hot pots, etc etc

This is an easy favourite of ours which the kids love.  We use bacon lardons rather than pancetta; cheaper & less chopping, and don't use thyme unless we've remembered to pack any.  So is this, with sundried toms (jar), red onion and balsamic vinigar.  Dead easy & quick too!

Another camping favourite is Leek & Tarragon risotto.  When camping we use stock cubes and stick all the liquid in, put the lid on and drink the rest of the white wine whilst it blubs away, trying to remember to stir it every once in a while!

One of the above, plus a bbq makes for nice noshing on a weekend away!

We have a dairy-free child, so I understand why the quick-fix of a jar of sauce is not always so simple.

Having said that, one of our favourite camping meals uses a jar of Patak's Jalfrezi Sauce (one of the few curry sauces that are dairy free). Add either a tin of tuna or a bag of pre-cooked chicked slices and either jar or tinned mixed veg (the cheaper the better as they then contain more cauliflower which works really wells with the curry) I usually add chucky chopped celery and maybe a chopped sweet potato if I have one lying around.

A favourite pudding is 'camping' banoffee pudding. Crush some gingernuts in the bottom of a bowl. Slice a banana over the top. Add a layer of banana angel delight, followed by a layer of butterscoth angel delight (we usually use the Lidl's own brand - much cheaper). For the daiy-free version replace the angel delight with one of those individual Alpro Butterscoth desserts. (long-life so ideal for camping!)
