Personally, I would use a 12V Gel motorcyle type battery. They can be bought for about £20, which is more expensive than the 6V things, but they have proper tags rather than springs for connecting and can be recharged. If you have SCATS store near you, they sell them for electric fences quite cheaply. The only thing is that you would need to keep it charged, as they don't like being completely discharged. Something like the Whale GP1352: LINK would be suitable. Then you just need either a footswitch or a button mounted somewhere on the kitchen unit.
