We have had a Campet, a Jametic, and now a Combi Camp. I like the Combi Camp best, it is really easy to pitch and the cabin can be used without the awning if necessary. As a trailer though it is quite big and quite heavy. That said, we have the main awning, a side annex, a rear awning and all the kit for four adults, so once it truly is the two of us perhaps it will be a bit lighter!
Another we looked at was the Raclet Moovea, that was small and light and could have had a two berth annex added, but no kitchen. I believe the new Panama is similar and available with a kitchen.

Might be worth a quick read of this to get an idea of the options; Choosing A Folding Camper Or Trailer Tent, What Are The Options?
Basically, to quickly summarise, there are 5 main types;
(1) Traditional trailer tents, which you already know are way too slow to set up.
(2) Pram hood style ones (like the Camp-lets, Trigano Odyssee, and Comanche Kenya)
(3) Combi-Camp style, which includes all Combi-Camp models, the Trigano Alpha and Comanche Motana.
(4) Four berth folding campers, such as the Pennine Aztec / Fiesta, Conway Countryman and Dandy Dart
(5) Six berth folding campers, like Pennine Pullman, Dandy Dimension and Conway Cruiser.
If you're going for a trailer tent that's quick and easy to set up, then you may want to consider the pram hood styles, as they are mid way between Combi-Camps and traditionals, time wise, but most are four berth, whereas the Combis tend to be be two berth only. Yes, of course, you can add on extra annexes etc, but then you're back to extra time and effort, which is what we're trying to avoid here.
Without knowing budget, it's difficult to make too many specific recommendations, but, as a couple of people have mentioned above, possibly worth looking at the folding campers, as well. I bought one of these for ease of setting up. because I work for myself, a lot of my breaks tend to be shorter periods, so I didn't want to be messing around setting up for hours, like I used to with my previous tents. 15 minutes, and I'm up and ready, plus another 30 or so for the awning, and that includes everything. The one problem with the quick set up trailer tents, which, again, I think has been mentioned above, is that you still need to set all the gear up. That said, it will depend on model. The new Combi-Camps have built in kitchen unit, as do the Camp-lets etc, but, again, it depends on budget. If you are looking at, say, an older Combi-Camp, then you will need to set up the kitchen etc yourself. With folding campers, ease of setup will vary, depending on age, model etc. Many of the Conways are easy to set up, for one, as the beds just slide out. Newer Pennine models are easier as they have gas assisted struts, but older ones can be heavy for one person, sometimes. Again, a lot of it will come down to what you have to spend, really, but plenty of options out there for pretty much any budget, if you know where to look.

Yes, sorry, should have made that clear. Whilst a lot of the Combi-Camps are two berth, they have been doing 4 berth ones since the mid eighties. I think the 404 was the first. They brought out two together, in about 1984(ish) the 202 and the 404. Identical apart from the berths. 4 berth has been an option since then. Only slight issue with that is that, in order to achieve it, the beds are turned through 90 degrees, which means they intrude into the available floor space, which isn't ideal, if you're away without awning. Still a lovely unit though.
