I would say practice putting it up and down a few times at home if you can. It gets easier and quicker each time.
My wife tripped headlong over the tow bar on out first try so off we went to casualty.
When you pull the legs out and lower them, don't raise the legs. Just let them hang if you know what I mean. Raising them makes it more difficult to get the batwing inserts in to the bed ends.
Keep the roof under control and keep it pulled as far to the loose end as you can. Don't let it sag in the middle if you can help it. Watch the online video a few times and see how they keep smoothing the roof to the right.

When folding do not forget to fasten the bolts holding the bed end boards on top of the mattresses. If you don't the mattresses fall out when you lift the beds over and get jammed. I know this from experience.
I assume it's a low side without the fridge. If so you have limited access to the inside when folded.
We find the easiest way to pack is to only have camping kit inside which can be left there permanently when you get home. This can include bedding and pillows, water containers, TV, heater, step, awning, crockery, pots and pans etc.
We carry food and clothes & fridge in the car meaning all we have to do is pack the clothes into bags or holdalls, food into boxes etc and put in the car. Then off we go. Simple to unpack when we get home as well with no need to open the dandy up between trips.
There is room to slip some items in under the folded beds on our designer, but not sure if this is possible on a low side as the beds do not lie on each other so are lower.
