We only ever go to sites with EHU, the awning lights are either battery/solar charged...im thinking of getting a 240-12v adaptor for the water pump and then another for the lights.

What you need then is a 12 volt transformer/rectifier. If you get one with sufficient output (say 10 amps) you will only need one for all your 12 volt stuff.
Unless you are planning on going ‘off grid” then not really. The Sargent PSU unit in our camper provides 12 V from the EHU for the lights/water pump and to charge up the leisure battery, and we were told it is best to put a battery in to smooth out any spikes in the mains, but probably cheaper to replace the odd LED light bulb which might pop if that happens than buy a leisure battery you have no intention of using.
However I have no experience of using it without a battery as we needed one as don’t always have hook up.
If you have a 12S 7 pin or 13 pin socket on the car you can get a lead to plug in and run the pump from the car battery for the odd time you have no EHU if necessary.
Use the EHU running a Power Supply Unit or (PSU) to run 12 volt pump and lights most of the time.
