Hi, Sorry to bring concern to the table but---
Please do not run your engine for long periods without a thermostat as it will only disguise the problem, I reckon you have a sticking thermostat due to winter standing and maybe a lack of antifreeze or -- the viscous fan coupling is faulty, unless of course it's electric, worst case, head gasket has burst, check the colour of engine oil if it's creamy the gasket has gone or if the exhaust is very steamy,
Test thermostat by placing it in a pan and boiling it, the thermostat should open just before boiling point although with today's energy costs it might be better to replace it which should be done every few years as good practice.
