Hi Posty, it is possible to fit a fridge in any van with some thought and it's not too hard a job, I have done a couple now, you can fit a kitchen unit across the van, however, I would think you could only run the fridge on 240V mains (or 12V when on the move), because apart from the gas vent, you need to have an air flow around the back of the fridge when running them on gas as they produce a lot of heat, which is not the case when running on 'leccy.
Have you considered the idea of fixing one of the side doors shut and not using it, then fit all the fridge vents into the door, this is something I have seen done.
There are quite a few 3 way fridges on ebay at the mo, they tend to go for between £75-150.
