Quite a lot of members have done this in their caravans, but gone for cushionfloor or similar rather than laminate as it is easier to work with and not as heavy as laminate. It would also be thinner so not such a problem with your fridge door.
You could then get a loose carpet made up which can be put in and taken out whenever you like for cleaning etc.
I've never done it myself so not sure how difficult a job it is, but I imagine that doing it in a motorhome is simillar to a caravan.
