Hi the best two things we have bought for use in the motorhome are a remoska (from Lakeland stores) and a double skillet.
The remoska will do almost anything and really cuts down on heat and cleaning etc you can roast a joint in it, I can almost do a full roast in there meal in there. And the skillet works well if you haven't got up hook.......toasted sandwiches are done in minutes in it.
I know you asked for recipes but I just thought I would point these two items out if you haven't already got them......apart from maybe a small milkman you don't need any other pans etc.

I hope the Morrisons own brand chilli tastes better than it looks! I like chilli and make my own the night before leaving and re-heat it in pan 1. Tiger bread - yum! But instead of rice, not with it!
The only thing I'd advise against cooking is anything with a lingering smell eg Curry, otherwise with a decent cooker you can cook most things.

we got a small steamer from tesco cook fish .meats .and all types veg .have a extension lead to use it out side .also got a skillet pan .

Double skillet for us and it cooks a really tasty loaf of bread using a bread mix from the shop. Mix it in the pan, cover with clingfilm and put it to rise in the pan, put it on heat for 35 mins and fresh yummy bread and no oven needed and no washing up just a wipe clean!
For when the food has all but run out, fry onion, left over veg, left over bacon or ham or cheese, garlic or herbs to taste, add beaten egg and lovely spanish omelette in a few minutes.

There are two small books published by Salmon as part of their 'Favourite recipes' range aimed at the camping/caravanning/motorhome fraternity.
I have six of each at £1.50 +postage or seek them out at various book/newsagent/local stores.
ISBN 978-1-84640-181-7 and ISBN 978-1-84640-133-6 are the references.
"Favourite Camping recipies for Campers and Caravanners":- includes recipies for: 'Bellybuttons', Campsite Warden's Eye, Ginger and Orange Pud, Hungry Hotpot, Steamy Tabloid Trout and a total of 34 recipies.
"Favourite Caravan and Motorhome Recipies" :- includes 33 recipies among which are, Babouts, Carribean fried dumplings, Unbaked Fruit Slice and Moroccan Yogurt Pot Cake.
Well they beat barbequed sausages & burgers!!

We have a halogen oven which we can cook all sorts in from toast to a full roast with minimal mess and hastle.
Then we have our electric wok which we use for stuff with sauces etc. We also have an extension so we can cook outside.
When we went on our first motorhome trip we did laugh about cooking garlic bread in our halogen oven and wondered if there is an etiquete to what you are allowed to cook so as not to stink out our neighbours! My OH did take great pleasure in wafting the smell of bacon n eggs out of our window!
As others have mentioned there are books out there but i guess it's just what's easiest for you.

Yes, I followed the instructions on the bread mix packet and just removed the cling film after rising (have patience and leave it for the full rising time) and popped the lid on. Used the lowest and smallest gas ring. I turned the skillet half way through cooking time. First time I baked bread it was not cooked so popped the lid on again and left it for another 10 or so mins and it stayed risen and was fine.
Really came in handy as we were on a no facility site and no shop nearby and I needed lunch for an early start following morning.

We always take some of those Schwartz grill and sizzle spices. Small jars of cajun or Jerk or Italian and sprinkle on chicken and fry gently. Lovely with just crusyty bread and a salad.
Also those small salad dressing bottles usually placed near the salads in superamarkets are useful as they keep us going for a week and don't take up space.
