go to sheild insurance there are loads of companies that will insure you for self build and they are not to strick on requirements .
They may ask you for photographic proof of your vehicle and an engineers report to be done by your mot station but that is not a hardship i use the above for my self build citroen relay £212.00 per year full comp cover.
