It doesn't matter when you're driving.
When the engine is running, a relay connects the leisure battery in parallel with the starter battery, so both charge. The 12 V to the fridge is also activated and the power to the van lights etc. is disconnected.
When you stop, the switch selects which battery supplies power to the internal lights, pump etc.. The 12V is disconnected from the fridge when the engine is stopped.
When using EHU, the charger generally only charges the leisure battery, but I had an Autotrail where the starter battery could be charged too.
