You will probably be better asking in the motorhome section, but my parents have a motor home and find that the biggest problem with car parks are that most of them forbid overnight parking (I assume that is what you were intending).
They also complain that the UK is the most anti motorhome country in Europe. Most of Europe have places you can pull in to take on water and empty your waste at the side of the road; often for free.
Being a caravanner, the opportunity of spending a night in a car park is very unlikely, but I know there are websites that have recommendations for cheap / free overnight parking spots for motor homes.
Didnt want to camp - it was more to pop into town for shopping and stuff, Didnt know if the height or size of the van would cause a problem

When we went to Cornwall last year, it wasn't so matter a case of finding a car park, but finding one with any spaces in.

Provided your van fits within the car parking space with no overhang over or even onto white lines you should be ok. Most beach side car parks do not have height barriers so you are ok parking during day. What annoys me about Cornwall car parks at beaches etc is often min. charge is about £4 so expensive if you just want a stroll around for an hour & move on.
You can often find parking beside the road if you don't mind a walk of about a mile. There are always signs forbidding overnight sleeping in vehicles & Newquay even has signs telling you not to cook in campers daytimes!
Surfy types use converted panel vans with no windows in order to sleep overnight in carparks etc without getting tickets.
Read the parking conditions carefully when you do park. We have found that some car parks "ban" campervans, even if they fit into spaces intended for cars.
Theres not many car park bays big enough for any sized motorhomes, as opposed to campervans, which are, erm, van sized at the end of the day.
Its an occupational hazard trying to get parked anywhere in anything bigger than your average tranny van. It comes with the territory if you opt for owt bigger im afraid.
