We also have a Quechua, and use it as extra sleeping space when our family want to come with us for a weekend. Yes they are very easy to put up, but theres a fair bit of cursing when it comes to take them down, even with practice in fishermans terms its like fighting a Marlin!
The smaller ones arent so bad, but ours is a 4 man and even after watching the Youtube videos and practicing in the back yard its still rather a pig to pack away!
Maybe one of the quick erect event shelters/kitchen tents would be more suitable for your needs and easier to store under one of the benches? The larger pop up tents would certainly not fit under, even the two man models are over 2ft in diameter folded.
