is it ok to leave fridge on gas on the ferry for 12 hours

No the ferry company will require all gas appliances to be switched off and safe

What would one do here ?

Put a load of those cooler box blocks in the fridge when you turn it all off. Would that hold the temp down for 12 hours ?

It's possible on long ferry crossing that electric hookup is available. It is for truck fridge trailers. So contact ferry company.

We freeze cartons of fruit juice put one in the freezer and one in the fridge and that keeps the fridge and freezer cold, once the juice has thawed out we drink it.
