Generally all vans have a built in voltmeter or charge indication. If not you can easily get either a portable digital multimeter or a DVM module to wire in (for a couple of pounds). You can get an indication of the percentage capacity from the voltage when off charge.
In any properly converted van the battery will charge from the alternator. You could get an ammeter, but I've never known one to be fitted. You would need one with a fairly high rating. You can get combined voltage and current meters - have a look on e Bay.
