As you say, maybe it's because the bed isn't raised very often, and it is this that has maybe caused some internal seals/components to occasionally "stick" ?...
Does it strike you as it's both the of struts doing it?
Seeing as you don't lift the bed very often, I just wondered if you could remove an offending one(or both?) and maybe just use a prop ?
(I used to use a little softwood batten prop, with a V notch in the ends, to fully hold up our French bed...although the actual "lift" was being assisted slightly by the weak gas struts).

We had a similar problem on the tailgate strut on our previous car. Try a squirt of WD40 on the strut and wiggle it up and down a few times.
