I been looking in to buying a Volkswagen Caravelle on a 2000 plate, it only has 2 single seats at the front and was just wondering if the passenger seat could be modified to a double seat and if so is it easy to do ?
I didn't think the Caravelle started as early as 2000 - possibly depends on the model.
If it came with an option as having 3 seats (or a double passenger seat), then it should be possible. However, The handbrake appears to be between the front seats, so I would assume that you couldn't. If you could, you would also have to consider seat belt mounts, possible pre-tensioner etc..
and advise your insurance company.

I'm tired of reality, so I'm off to look for a good fantasy.
Yeah it's defiantly a 2000, yeah seat bets is a good point, 1 would have to be a lap belt, which yeah insurance may not approve for a front seat maybe, could be more hassle than first thought .
Well, check where the hand brake lever is. I'm sure it sits between the front seats on later models. Would a third seat actually fit?
If 3 front seats are important, look at Fiat, Peugeot etc.. which can take a double passenger seat and I believe you can get a swivel mechanism for a double seat.

I will do some more investigating and yes will look into the others, it's more of the smaller type camper I'm thinking about, think it's along the lines of a dayvan maybe.
The VW T4 was offered with the choice of a single or double front passenger seat. The mounting points are already there, so it is an easy swap. There are usually several for sale on eBay, just make sure that it comes with the double seat base as well. The single passenger seat is more sought after so you could easily sell yours buy a double & make a make a small profit.
The middle seat belt is built into the double seat, so will not be a problem.
By the way VW have made a Caravelle since the 1970s at least.
If you do buy the Caravelle, it is well worth joining the Forum.https://www.vwt4forum.co.uk
