We had a bedford rascal that was converted to a camper. It had however been done professionally, by drivelodge i think, It was a great little vehicle and we were sorry to part with it.
Problems I forsee with your suggestion are:-
will there be enough space for a blowup matress as our van utilised the front seats for sleeping?
Possible insurance/dvla problems as to reregister it as a camper I think there are minimum requirements such as a fixed(pullout) bed mechanism, otherwise you are effectively sleeping in a van and you might find certain sites/organisations won't allow this. I could be being overly pessimistic here, it might be worth a look on the selfbuild campervan sites.
There are a couple of places that convert small vehicles, have a look at drivelodge, wheelhome, reimo also convert to your requirements.
