Some good suggestions... Love Padstow and disagree with the negative Rick Stein fish n chips comment - they are some of the best fish n chips I've eaten (and I've eaten a lot of good ones living in Yorkshire!). Well worth queing! His pub in nearby St Merryn is nice too. The Loster Hatchery in Padstow is really cool and good boat trips/ fishing trips. Camel Trail great for cycling. Camel Valley Wines is a lovely vinyard and do tours/ tastings if you are interested in that (their sparkling wine is fab).
Good beaches around Padstow/ Rock/ Polzeath/ Constantine. Watergate Bay (Jamie Oliver also has a Fifteen restaurant there which is great). Lots of surf beaches around here and you can get lessons, hire boards, kayaks etc. Bedruthen Steps between Padstow and Newquay is a beautiful and unusual beach with massive rock "arrangements" (very steep steps down the cliffs to get to it though). Porthcurno, Sennen, Kynance Cove...
Some lovely places to eat in St. Ives (Pothminster Porthwwidden, Porthmeor beach cafes). The Tate in St.Ives is "interesting" if it's wet.We' don't really "get" that sort of modern art but still enjoyed a look around one hideously wet afternoon. Nice town to mooch around.
Lizard (Southernmost point in mainland UK) is lovely and miles better than Lands End, which is rubbush (IMO). Nice cafe right on Lizard Point. Make it your mission to track down Ann's Pasty shop in Lizard Village - best pasties in Cornwall (therefore by definition in the world).
Minack Theatre is fab, as others have said, even if you just look around and don't catch a performance.
I'll add a few more which I don't think have been mentioned yet:
St. Michael's Mount - lovely NT property and nice "Island" setting. Nice place to explore. Check opening times/ days before you go as it was closed when we tried first time.
The Tin Mines at Geevor - really interesting, surprising and a very touching tribute to the miners who worled there. Good if it's wet.
There is an interesting second hand book shop/ cafe in St. Just (good if it's raining and they do really nice cream teas).
A must is to walk part of the SW Coast path - check out the website for some nice circualr short(ish) walks. Suggestions - Padstow to Harlyn, Lizard to Cadgwith, Cadgwith is a traditional fishing village with fishing boats pulled up on the beach and a fab fish seller for fresh fish for the BBQ! St. Ives to Zennor (bit harder walk but worth it for a meal at The Gurnard's Head before getting the bus back!).
