I do the phil vickery recipe where you make a trivet on the bottom of the tray with carrotts, onions, leek, bay leaves, chicken stock and white wine. Sit the turkey on that but a bit of butter under the skin then cover with foil and cook. Take foil off and brown the turkey.

The main thing is not to cook for too long as this will dry the turkey and make sure you let it rest for a long time.

Today I cooked 6 turkey legs.

As the butcher said, their very nice with little wastage, but there a bugger to catch!!!!

To all of you who have the Turkey crowns

We don't like the breast of Turkey, much prefer the legs, and because most people want breast, I buy 2 legs and it costs very little to have a lovely roast

Only thing is, they are hard to find close to Christmas, so I've got them in the freezer already.    

Now If only I could find what they do with the wings, I'd be happy.   Must have a word with the butcher in Morrisons

I have ordered a whole one - normally do, freak out a bit with crowns as cooking them all the way through worries me more than a dry turkey!!! I cannot remember a year I haven't cooked a turkey either on Christmas Day or Boxing Day since I was about 21. Hey ho....

I'll be cooking a couple of pheasants. Didn't cost me a penny and were free range until they were curtailed in flight.

I cook my turkey crown in the slow cooker. If you have never cooked a joint in a slow cooker, you are missing out.

Place a chicken in a slow cooker upside down on a plate, then fill with chicken stock so its NOT touching the bird.

It just falls ....FALLS off the bone and is so succulent and as a slow cooker is the same cost as a light bulb to run, considerably cheaper.

I never cook a joint in the oven anymore

Whilst I have seen lots of Deer killed on the roads up here, bottles of Red Wine by the roadside are a lot rarer!

I thought for meat to be edible for human consumption it had to be gutted hygienically to avoid contamination of the gut contents into the flesh as soon as the animal was killed. Not that l have ever eaten road kill, but my step brother does go shooting on the Scottish estates, and they always gut their kill within about an hour of it being shot.

l also used to know an old Norfolk charicter who had a freezer full of roadkill he had found, including a few Muntjack deer and the odd goose or two. Her claimed he collected them to feed his falcons with, but he always used to have something that smelled quite 'gamey' bubbling away in the pot whenever l called in!

Been checking to find this thread. Free range turkeys at £6.65 per kilo delivered to a Scottish island doesn't sound too awful - I was panicking! That's only 0.65 up from last year. I thought about getting a crown because there's only 3 of us but I like leg and besides I can a lot of additional meals out of the bird, not to mention soup! Works out cheaper than a half of mutton.

Doing well on the Christmas tree front, too. Said we'd not get a tree this year with Mum being so unwell and all the expense we've had trying to make life comfy for her - so someone's given me a 4' one - with roots! - probably nicked from the forestry, mind!
