I know you say you have no time to shop but surely there will be one of those small Express shops or a garage on the way where you can buy eggs or bread. They tend to be open until late as long as the garage is open anyway. Supports local shops too.

Worth googling Tesco express and you can enter a location and it gives you options and opening times and most are until 23.00.

Spanish omelette is our staple standby.

I get around this when camping by taking lots of fresh veg and a multi tier steamer.  You can then get a good variety of meals by changing the choice of veg. 

Here’s a few ideas:

Break up some tinned smoked mackerel, mix them in with new potatoes  and serve with steamed peppers and courgettes.

Mash spuds, carrot, turnips, sugar snap peas and tinned beef in gravy.

Eggs don’t need a fridge, so omelettes, veg and potato wedges.

Thanks for ideas.

We were hoping to pick up some butter/milk at a local garage but sometimes they can be very limited and we are talking over the Xmas period here so times might not be the norm.

Tuna and sweetcorn sounds good to me, but hubby hates both! Nor will he eat omelettes! So between him, my mums dislike of tins, my intolerance to spices and the kids we are limited, lol.

I think we may have worked something out though.

Paella plus savoury rice, tinned meatballs and pasta, steak and kidney puds with smash and hopefully some fresh veg from a small shop, chicken casserole made with chunky soup and some new pots or similar and herby dumplings.
