I like to eat it cold, mashed up with some mayonnaise and finely chopped gherkin and spring onions, in a bun or as a sandwich.

Corned beef pie, layer of sliced onion, layer of corned beef, layer of sliced potatoes. Continue till pyrex is full finishing with layer of potatoes. Small amount of stock and in the oven till cooked Mmmmmmmmm

I know I'm a day late, but posh corned beef hash... potatoes, beetroot, corned beef, onions, garlic, fennel seeds & a dash of worcester sauce... mmmmmmm
I fried some onion and potato in a little oil. Added a chopped clove of garlic, 1 chopped home grown green chillie, mixed peppers, a chopped tomato - and fried for a while.
Added the chopped corned beef 1/2 pint of passata and a tblspoon of tomato puree and a handful of mixed herbs and let it down with a little water.
Transferred to baking dish and baked in a medium oven for 40 minutes, took it out grated cheddar on top and finished under the grill.
Voila corned beef ala Dave8858! Troughed it with chunks of the crusty freshly baked loaf we got from Tesco that morning.
