I know this will mean nothing to almost everyone here but tonight I have successfully made vegan lemon meringue pie and it is so good I could eat the lot.

I used to love lemon meringue pie and have not had it for over 15 years. I cannot tell you how happy I am to be able to eat it and know that it is entirely cruelty free I am doing the happy dance

Would you believe the water from a tin of butter beans? The water from most mild flavoured beans seems to work. Whisk to soft peaks then add sugar a bit at a time and keep whisking to stiff peaks bit of vanilla extract and bake. They make really good crunchy meringue and a wonderful topping for pie

For the record not my idea, this was posted on FB last week and is now a sensation there are over 1000 people on a vegan meringue Fb page
