Are they any good? I have been reading a bit about them and wonder if they are any good for just shutting out a noisy environment without having music running through them. Do they just shut out constant noise (machinery, traffic etc) or can they deal with varying noise levels (sirens, kids shouting/playing etc) They seem to vary wildly in price and whilst I dont want to buy cheap and regret it I dont want to spend a fortune and regret it either. Any advice and suggestions very wlecome! Thanks

You need to go and read some AV review sites, how good they are varies hugely. I have tried some that were useless and some that were very good. But the good ones cost quite a bit. That was a few years back now. Also they tended to only work with music playing, but that may have changed.
Check out the shooting gear web sites. Some are not cheap though. A guy I shoot with has electronic ones they adjust the surrounding sound level and cut out the sound of the shotgun blast.

A guy I worked with at sea had some made for when he was in the engine room. Blocked out most of noise but could still hear you talk. Not sure how much they cost but you can't put a price on your hearing.

It's an expensive technology - don't buy cheap ones. I think that until fairly recently the market focused on cutting steady noise: the engine roar on airliners or office aircon. Newer products try to do a decent job on quietening a city commute. Out of curiosity I tried my in-ear Bose ones (QC20i) in the big blow just before Easter (60mph wind - in a tent) and it was extraordinary: could have been in a library. You should be able to try them in a shop. Be prepared to pay £200 - £300 or half that for 2nd hand.
I have Sony ones which I use when flying. They cut out the aircraft noise even when you are not listening to music but you can hear if someone speaks to you.
Not the cheapest but small in the ear ones.
