Being brought up in the Midlands on a street with a fish and chip shop on the corner I am addicted to mushy peas but I have never found any so nice as those were. I don't know how they made them but I would imagine in those days there were no additives...if you wanted salt on them it was freely available on the counter. I have never heard of putting sugar in them but certainly some brands of tinned mushy peas seem to have a none too nice after-taste which I have always put down to too much preservative.

....I could just eat a steak and kidney pie, chips and mushy peas with thick brown gravy <dribbles>.

When I lived in Hull , it was common practice to have some mint sauce available , in the chip shop , to add to ones mushy peas , along with pepper , and of course , vinegar .
I can't say I've ever had sugar on them , not something I'd be willing to try either .

It used to be tradition to eat a dish of mushy peas with mint sauce whist out shopping around the old Nottingham Market, with many hot pea stalls plying their trade along side the wet fish traders.

The wet fish often attracted flies, which then landed and often fell into the large open bowls of mint sauce, from which the customers ladelled the sweet vinegary mixture over their steaming hot peas, which were cooked up using old laundry 'coppers' which ran on gas.

There was very little food hygiene control back in the 50s and 60s, and many a fly was swallowed after being mistaken for a bit of the mint stalk!

Laughing my head off this was the cause of my very first marital argument 30 years ago OH put sugar in the garden peas because his family always put sugar in the peas as if peas weren't sweet enough.

After tears and tantrums that one day we have remained happily married but the peas have never again seen sugar!

mother in law always puts a small amount of sugar in with her peas, and she is as Yorkshire as you can get!

I put a spot of sugar in the cooking water with fresh podded peas, sometimes they need it. And salt them at the end of cooking, rather than in the water, as the salt can tend to toughen the skins.
