Sometimes just some water in a baking tray at the bottom of the oven will do the trick.
We have a built in watersprayer but often just use the baking tray route.
Being terribly posh, we also have a steam oven, but that is far more expensive than water in a baking tray.

Done that Stuart, unfortunately I am nowhere near as posh as you! I'm not sure if just brushing on the mixture would do, but JO specifies an atomiser.

ANY FOOD QUALITY PLASTIC SPRAY BOTTLE will do or empty Heinz ketchup bottle if you can find spray with cap to fit or as such so long as you sterilize the spray top and then wash with hot water.
you can buy pump action spray bottles for the catering trade quite often used in damping the icing of cakes on elaborate wedding cakes etc, these give out a ultra fine mist .

I am lost here! What on earth is this about using an atomiser on food. What is it all about?
I get the idea of using something like this in cake decoration but not with the ingredients given here.
Is it a way of sprinkling a flavour over food? What is the advantage of using an atomiser.
I have been cooking for many many years and have seen fads come and go but can think of no reason to use an atomiser. Am I missing something?

I never realised that the plastic can leak out poison's to the food inside.
I try to use plastic for everything being in a motorhome as I'm afraid that glass could break and damage stuff.
These forums are great.
