I'm veggie and find most restaurants and pubs have some veggie options, occasionally vegan too but not so often. Wetherspoons have a reasonable veggie menu and cheap. I do find, though, that often the choices are lasagne or a burger but at least you won't starve!
If you Google local pubs you'll probably find a sample menu, or try Trip Adviser to see if anyone's mentioned veggie options.
