Even over the past 2 years we have not had a real problem booking at the last minute, and that's what we prefer to do. Not quite "hitch up and go" but not booking months in advance either. We always avoid peak times though, and bank holidays are a definite no-no. I don't like crowded places and I don't like "holiday prices" either, so we tend to go when most others aren't. We never go Friday or Saturday, it's usually Monday when the weekenders have gone home. I think that is one of the reasons we don't have that much of a problem booking last minute. Often sites that are absolutely rammed over the weekend are half empty on Monday. Try booking a site online for two weeks starting on Friday or Saturday and it comes back "fully booked". Try again starting on the Monday and we get in straight away. In reality the site was only "fully booked" over the weekend, but the booking algorithm just looked at the first day.

That's why i book so far in advance Colin, Monday to Friday is ok weekends are booked, I cant go home back to Manchester from Cornwall for the weekend

Likewise, most of my trips are long distance, only 3 or 4 days midweek is just not viable, there HAS to be a w/e in there somewhere, don't usually care if I start/finish mid-week or w/e, but got to be a w/e involved!

I too avoid peak times and especially school holidays, but find w/e's are often booked throughout most of the year. It's a ongoing debate with CAMC members that it's impossible to book a week or more because there are no free week ends! The 'w/e warriors' ruin the opportunities for everyone else it seems!
