Two easy options, contact the Welton Owners Club who almost certainly will have a collection of data on the vans, or simply find a local weighbridge and weigh it! http://weltonowners.co.uk/
Chances are with a van of that age, it will have been tinkered with and/or repaired in some way or other, so no matter what any original figures may state, it may be different now. From a legal point of view, the original figures may stand, from a practical towing point of view, the current weight may be more relevant if tow car is very limited.

I'd be surprised if many, if any, caravans would weigh less than 600kg. My little box trailer weighs more than that when loaded, and my 1992 Elddis caravan weighs nearly a ton, and it is much lighter than a modern one of the same size. Are you sure that the CR-V can only tow 600kg? It sounds extremely low to me, especially for a 2 litre engine. My diesel auto X Trail is a 2 litre and it can tow 1350kg. The manual version of my car can tow 2,000kg, but I prefer automatics.
Another place to find some information about your caravan could be the Retro Camping Club, but as Monty15 rightly says, older caravans do tend to have been modified and/or repaired, which can alter the actual weight quite considerably.
