Been towing a 30yr old 2 birth Elddis minstrel which was kindly donated by a close friend for a year now (roughly 10 outings).
The wife and I have decided that caravaning is for us (and our 2 dogs) and want to upgrade.
Looking for a lightweight 4 birth fixed bed I.e ranger 460/4 or Sprite Alpine 4. Varying MTPLM from 1190-1260kg approx.
I have 2011 1.6tdi Golf 103bhp 1314kg kerb weight. 85 % = 1118kg.
Is this doable?

If you look at one of my posts from two years ago you will see my comments about towing 1150kg with a 110 bhp car and how it struggled on the hills. Even if this proposed outfit is possible within the car's limits you would be at 95% with the heaviest caravan and I think you would want more power. I think you need a heavier, more powerful car or a lighter caravan.
The 1400kg limit is the max trailer weight for performing a hill start, it is not suggesting that it is safe to tow a big white box of that weight at motorway speeds.
Your proposed outfit would be at the maximum limit of what you could tow and it would be legal but it is not a combination that I would be happy to drive more than a few miles at a sedate speed. Ideally you want a heavier, more powerful car to tow that sort of weight.
The Golf and Octavia do make good tow cars but there is a huge range of different engines and weights available in those two car ranges over the years. A 140 bhp diesel Golf would be a bit heavier than your current car and give you a lot more power in reserve to cope with hills and overtaking.
As you already have the Golf I would try it with a new caravan and see how it goes, it may be fine or you may struggle and find towing is hard work for you and the car. You could then look into changing the car in the future for something that is a better match.

Rich if you like your golf and the weights are right why not have it remapped I would thought that 1.6 engine comes in a few variations, far cheaper than changing the car and probably improve fuel performance

When we collected our first caravan from Surrey and towed it home to Staffordshire, we used a 2012 VW Passat with the same 1.6 TDI engine as fitted to your Golf. The caravan weighs 1050kg unladen and was empty apart from a few extras thrown in by the seller - call it 1100kg.
The car managed but performance was, let's say sedate. 6th gear was not an option for anything other than downhill runs, and uphills required frequent changes to 4th or even 3rd. You're talking about adding 200kg on top of that when your caravan is fully loaded and you will feel the difference. I suspect that, as Rob says, for anything more than short journeys you'll want more power.
We changed the car - it was leased through work and due for replacement anyway - for the 2.0 TDI (150bhp) version of the same car and it was far better. I won't say we didn't know the caravan was on the back because that would be a big lie, but at no point were we ever worried about it even when towing to the bottom of the Swiss Alps!

I'd like to know where the MTPLM to MIRO relation came from and why it's legally carved in stone? Surely the Laden Mass of a caravan inhabiting 4-5 people camping for a week or two MAY add 200kg + to the Unladen mass but two adults, with no kids camping for 3-4 nights? I'm guessing 50kg-70kg and I'm being generous.
Please don't think I'm being ignorant because I am keen to learn but this has me stumped ATM.
My understanding is that 85% (Novice Tower of my golf's kerb weight is 1118kg.
The van I like has the unladen weight of 1110kg I think.
If I were to add 50-70kg, I take it to 90% (intermediate tower).
Would this still be unadvisable, even on a short term basis?
