first thing how long ago did you pass your driving test,if post 1997 you will have to look at the gross weights of tow vehicle and MTPLM of Caravan very carefully to stay legal,
Someone will soon tell me if I am wrong, but if your stated kerb weight is correct, then you can legally tow 1678kg. The Caravan Club suggest that 85% of this weight would be the preferred option, depending on your towing experience.
Check with VW. Do they, as a lot of manufacturers do, slap a towing weight restriction on your particular model?
As far as which van, there are quite a few with beds at both ends. There is a website (vandata?) or something like that, that list most along with layout drawings.

The Bailey Ranger 500/5 or 540/6 fit the bill & come in at 1268kg & 1306kg respectively. CLICK
The Touran, & especially in 140bhp guise, makes an excellent tow-car...bags of torque, short rear overhang etc. Our Swift Challenger (1500kgMTPLM) was being towed with a 100bhp Touran & they reckoned it was a great tow-car.
We needed the 5 berth, separate ends, layout & are well pleased with our Challenger.
