I am confused.com as to why VW state that 2500kg can be towed with this particular model?

Bearing in mind I have been a caravanner for 15 years, I also found the following....

You can legally tow up to the car manufacturer’s towing limit. This may be in excess of 100% (of the kerb weight of the tow car) but only if you passed your car driving test before January 1st 1997." (I passed my test in 1978).

Anybody in support of the above?

The 2500 kg tow limit is based on a flat trailer that will have a much lower centre of gravity & less frontal area than a caravan & will be much less affected by sway or crosswinds. Max tow weights are in regards to the capability of the drivetrain, they have no bearing on the outfit's stability.

Yup, exactly - officially, the towing limit is how much the car can pull from a standing start on a 12% incline (or something like that), so only relates to the power of the engine.

Stability is what you've got to worry about - the common analogy is you want the dog to wag the tail and not vice-versa ie. you want the car to control the caravan and the heavier the car (the dog), the easier it is to control the caravan (the tail).
