Depends how accurate the scales are that you use or used.
As close to 80kg as you can get.
Its recommended that you get 7% of the caravans weight. You dont say what caravan you have and its gross weight but figures i have for the 500 models are well over your limit at 7%.
7% would be in excess of 100kg.
So load as close to 80kg as you can get. If you use the caravan noseweight gauges, Make sure its a calibrated one. The others are not very accurate.
