Complete newbie here - or to be more precise - potential newbie as I have neither a suitable Car nor a Caravan
However I will if we go ahead be having the above Caravan even though there seems to be a long waiting list currently !
My question to the wealth of experience on here is I am considering a Hyundai IX35 Automatic Diesel 2.0 Litre or its Kia equivalent the Sportage Auto Diesel 2.0
I know there are charts and all sorts of info but at the moment I cant get my head round them and I wonder if someone can look and say a definitive "yes" to either or both Cars being suitable

Before you buy anything sort out what you are allowed to tow. If your licence is dated before 1997 the world is your oyster, if it is after 1997 then you are restricted to a combination where the sum of the max plated weights is less than 3500kg. Thus has the effect of restricting severely the vehicles yo choose from. Picking the large vehicles as you seem to have done makes choosing a caravan much more difficult.
To get the widest choice of caravans you should be looking at cars with a maximum gross weight within a whisker of 200okg as this will let you pick vans that are up to 1500kg and there are lots of those to choose from.

For a licence dated 1997 or later you must add together the plated max weight of the caravan and trailer, if the total is 3500 or less you can tow it. You may even tow a caravan with a MAM greater than the cars unladen mass the restriction was removed in 2013
Most large diesel saloons or estates will tow that van and are considerably cheaper to run.
Mondeo, skoda and others especially if its going to be in daily use
Oh dear, same old assumptions from SB. 33ish towing, 45mpg round town and 50mpg on long runs with my Mitsubishi ASX. Not bad for 4wd auto with 150bhp under the hood. Now just how much would I actually save, say, doing 10,000 miles a year with a Mondy or a Skoda?
Don't know how much you are prepared to pay Cheesedof for a car, but may be also worth looking at the ASX. For an older one, go for a 1.8 diesel with the 150bhp engine (they later detuned it to 110bhp), or for a newer one go for the 2.2 diesel auto. All new Mitsubishis now have 5 years warranty.

Strangely before I had my Caravan "idea" I was looking at an Outlander. I decided against it but loved the look of the ASX.
They told me it was coming soon with a "plug in" variant so I made a mental note to go back as and when.
Now I have potentially decided to buy a Caravan I will be looking at the Kia which is 24k for Auto model and I will now have a look at the ASX again when I check it will be ok on Whattowcar... thanks for the advice
Edit ... have just looked at ASX 2.2 Lltre and it can only tow 1400 kgs so probably not good enough for this Caravan ?
Actually it will tow 1470kg! Check the weight plate inside the door pillar if you visit a showroom. Bet even the salesmen have not noticed that. All ASX are plated the same.
The ASX is rather odd in having such a low tow weight, I think Mitsubishi have done that deliberately to move sales to the Outlander. The ASX is based on the Outlander, has the same engine and running gear, and even the wheelbase is the same. It is just a bit shorter front to back. The Outlander has a towing limit of 2000kg, yet its kerb weight is just 95kg more.
Our 2.2 ASX is brilliant towing the Bailey. Our Bailey is a bit lighter than yours, but with 150bhp under the bonnet it barely blinks. Incidentally, this engine has been detuned from 174 bhp. The hybrid version is due in 2016/2017.
