The 560 has a body length of less than 7mtres so is legal to tow with vehicle under 3.5t gvw, it is a touring caravan unlike larger Hobbys over 7mtre body length which can only really be considered site caravans. I'm talking about length of body, not overall length including A frame.
So you are ok to tow it provided you have correct licence & suitable vehicle.
If you are from NI then your UK driving licence must have B+E categories. Provided you passed your driving test before Jan 1997 then you have a B+E, if later then you need to take another test before you can tow this caravan with vehicle you have. If You are from ROI then I do not know & you will have to check but UK licence requires B+E for a car/caravan combination of combined MAM of over 3.5t which this one will be.
Next thing. This caravan has an mtplm(fully loaded weight)of 1700kg so you need to check if your van can tow this weight, probably as it is a van based vehicle it will but you need to check in vehicle handbook.
From your vehicle specs I can find here. you have kerbweight of 1963kg, max tow weight of 2tonnes & gvw of 2700kg.
This means that you have suitable tow vehicle for caravan although engine power is fairly low but any suitable caravan will require B+E licence for you to drive it. I think licence categories are common to all EU driving licences so with ROI licence, requirements will probably be the same. Provided you have legal licence for vehicle/caravan you are driving in your own country then you are legal in any EU country.
