My current set up is a Freelander 2 (2010) with standard12s 12n electrics and a 2016 Swift Kudos 630 with the new 13pin Euro connector. I have an adapter to connect the two but I don't think it looks very good and there is a risk of dragging the wires on the floor as they are too long. I have the electrics mounted on good strong mountings on the bar itself.
The idea of simply wiring both 7 core wires into the one permanent 13 pin sounds simple enough job.
However as we run a small farm the freelander spends as much time towing cattle trailers and flat beds etc as it does towing the caravan.
My idea:
Leave the black 7 pin in place, but wire in an additional 7 core cable in to the back of it. Then run this additional cable and the cable from the old grey 7 pin in to a new 13 pin Euro socket which can be mounted where the old grey connector Sat. Essentially then having the two options available for caravan or trailer.

As NickH posts is an easy option , I wired my black and grey caravan cables to a twin entry 13 pin plug and bought the same adaptor for use with my small trailer also I am able to tow/ move my daughters caravan if required.
If you want to have 2 sockets then it would be easy enough to wire up but the single adaptor is the easier option. It's the double adaptor that you use for your caravan that is cumbersome but single adaptor is not.

I doubt you will get two cables into a 7 pin plug. It's hard enough getting one in. There isn't much room.
I have a boat and a camping trailer plus the caravan. I keep a small adaptor permanently plugged in to the car 13 pin socket to use for the boat and camping trailer. I remove it for the caravan. Really quite easy.
I use a system which sounds like what you are looking for.But to make life easier I have mounted a square waterproof junction box on the rear of the chassis.The supplies from the car go into one side and two cables come out of the other--one to a 7-pin and the other to a 13-pin. Much more room to work with a junction box and all parts are easy to find at any electrical shop.IP RATED box..nylon compression glands and nuts..."choccy block" connectors for the inside connections. Tip--draw a wiring diagram before you start.Works fine for me.Regarding your long cables--I find that a couple of twists takes up the slack enough to keep cable off the ground or even intertwine cable with your breakaway cable. I pulled the wired from my two 7 pin plugs back into the boot of my car where I fitted a junction box. From here I ran a seven core cable to the 12n socket and a 13 core cable to a 13 pin socket which I fitted in place of my 12s socket. I think that is basically what you are looking to replicate.
