Why would auto take off 500kg ?

There are lots of reasons how a manufacturer arrives at a towing weight for a particular car. However, in your scenario, the most likely reason is the ability of the auto gearbox to cope with a certain weight/strain.

Take into account that the standard recommendation is that the weight of the caravan should not be more than 85% of the towcar's kerbweight.
A quick Google suggests the Sorrento's kerbweight is around 1950kg so any limitation imposed by the gearbox just doesn't really matter.
