The question is whether you have a B+E licence or just a B? If a B licence post 1996 weight of caravan is determined by subtracting the gross maximum weight of the car from 3500kg i.e. gross maxim weight of car is 2150kg then maximum MTPLM of caravan would be 1350kg even though the car can tow up to 1500kg.

I would go by the lower of the two figures, as it's not a good idea to have nothing in reserve, in my opinion. Particularly with a petrol engine. That is just my opinion though.

I passed test in 1979 and have B+E , so the mondeo can only legally tow 1295kg then ( 3205kg gtw minus 1910gvw = 1295kg ) not 1500kg as stated on V5 ?
If you have a B+E driving licence then you can tow up to the maximum train weight of the vehicle. It seems that you can tow a caravan with a maximum MTPLM of up to 1500kg.

It may well be that it can tow 1500kg but there is usually a caveat that it must be within the gross train weight.
So if GTW allows 1295kg with a fully laden car that is all you can tow but if the car is lightly loaded so it is 210kg below its max capacity you can tow 1500kg.
If it's even more lightly loaded, 1500kg remains the max limit.

The police or DVSA look at the maximum train weight on the plate attached to the car. If the sum of the weight of the trailer plus the maximum gross weight of the car exceeds the maximum train weight of the car it is a conviction. There is no need to weigh the towing vehicle on its own as it already has a plate.
