As you've got the car Scooby Doo I'd give it a whirl, the towbar should fit another galaxy if you decide to change the one you've bought. Myself I wouldn't worry about towing consumption, if the cars doing OK for you solo, you'll have to swallow a bit more fuel costs towing but at least you'll have the power there. Only you know how you really feel about it.
The beauty of buying a car without a towbar on it is you know for sure it hasn't had it guts pulled out before you got it. That's what I've always done although it obviously costs me to get towbars fitted.
My 2.2Dci espace used to do about 33-34 mpg solo & down to 28 towing but it was working hard to tow everything my lovely lady managed to cram into the van. I've just bought a new 3.0Dci Espace for the extra power & if it needs more fuel so be it. You can't have it both ways & I like to have the power on tap, I've run big engined lorries for years & big engines dont work hard but little ones wear out.

I have a 2000 2.3 Zetec petrol engine, automatic, but it is not a V6, it is actually the basis of the RS engine. I think the V6 is the Ghia, but not sure on this.
It flies and no it is not the best on the block for fuel consumption, I could not honestly give you a figure, but I would guess about 25mpg. It actually seems to be better when I am towing the caravan but that may be because I am only doing about 50mph
But I will be honest, as much as I love my car, I am not particularly happy with mine for towing, it is ok on the straight, downhill etc, but on an uphill stretch it labours badly (40 ish) and the temperature starts to go up. But mine is an auto. Have just bought another car for towing but I will keep the Galaxy as our other car and get rid of her Previa.
