I usually make a chilli and a curry and freeze them in bags . One is allowed to defrost for the first night's meal  then the second keeps things cold in the cool bag till we eat it the second day .

If you took a large fry pan/wok you could do fajitas. Buy the packet before you go and the pepper and onion just need chicken breast then slice it up quick cook dinner.

Jar sweet and sour, rice buy before you go and chicken breast. quick and warming

What about salmon cake's like showing on sainsburys advert get dehidrated potatoe before you go. And fry them off and salad
