When I went away on my own I took some frozen mince, dry pasta & a jar of bolegnaise sauce for first meal. For second day I took some pre-cooked beef, cubed & frozen, with rice & a jar of curry sauce. Both quite cheap & very quick & easy to cook.
Hubby likes to go for pub meals most of the time, but on the odd times he's agreed to me cooking when camping, I took pre-cooked beef sliced & frozen, cabbage, carrotts, parsnips, brocolli & peas, all blanched & then frozen in meal-size packs. All the veg went into one saucepan divided with my old pressure cooker trivets. I made up a pint of gravy & put the sliced meat into another saucepan with the gravy. Then boiled the kettle to make Smash powdered mash. We had a full Sunday dinner in the tent using just two saucepans & a measuring jug (for the mash)

For our 'weekenders' I part cook a Thai Style chicken stir-fry. The Supermarkets near me, stock low cost bags of frozen chicken breasts.
I thaw the required quantity during Thursday. In the evening I part cook it, and cook the required amount of rice.
When cooled, I insert them into food bags and store in the fridge.
On site, meat into pot, heat up, add rice, serve when ready (less than 5 mins)
That's the Friday dinner sorted.
For breakfasts I weigh out 75gm of Bran Flakes and put them into food bags.
I use a 500ml 'Long Life' (44p at Tesco) to heat up, for them, and the rest for coffee.
(That's one bag of cereal per person, and one milk carton per day)
Saturday dinner, I have a 'Mattessons' smoked pork sausage (got some from Tesco on offer at 1 GBP) and pack of noodles (Lidl and Wilkinsons have low cost ones 'King Li').
Heat 250ml of water in pot, slice the sausage (I use 60% for myself) into discs and put into pot. 2 mins later, add pack of noodles and flavour enhancer (if desired) when water is absorbed and noodles soft, eat and enjoy.
As stated this is for a weekend break, but you didn't state how long you go for.
I wouldn't have the same thing every night if it was for a week. But this is economical, 50p for breakfast, and about 90p for dinner (add more for drinks, e.g. nothing for water, 1.75 GBP for 2*175ml glasses of Chilean Chardonnay)
You didn't state you are a vegetarian, therefore what I've offered may be of interest to you?
