This suggestion is more of an assembly job rather than a simple opening of a tin, but it's dead easy.

Take a bag of pre-prepared veg such as carrot, celery and onion...or even leeks or peppers or whatever. Fry them all off for a minute or two and cut in, with scissors, a whole chorizo cut into 1cm chunks. Then empty in a can of toms and a can of butter beans with it's liquid too. Cook for 10 minutes or so until the veg are soft.

The resulting stew is hearty, filling and very tasty as the chorizo is full of flavour. I do this dish at home at least once a week, except I wouldn't buy pre-prepared veg. On a campsite though, we're allowed time off from the chopping board.

Quick cook pasta spirals, add a tin of drained tuna, and a small bottle of tomato sauce, with mushrooms or whatever, heat through, serve. If you use half a big bottle of sauce, use the rest over cooked sausages. Serve with crusty bread.

Another vote for the 'Look what we found' long life food packs here. Have tried the bolognese and the chilli con carne and both were really tasty - worth it for an easy treat I think  Still have a soup in reserve for next time!

On my 1st trip to Glen Coe in April..Torquemada(fellow member)said he would provide the evening meal on the day of his arrival...Something he called "Jambalia"(sp) which we renamed "Trollop Stew"

1-2 bags of microwave rice.. placed in boiling water with a stock cube..and left to simmer

Add to the pot 1 tin of hotdog sausage..2-4 small chorzoi sausage and 1 Mattisons large pork sausage...All chopped or broken by hand...1 small tin of sweet corn/peas etc..and let it all simmer for 15 mins(We added one of Jim Call's unlabelled tins(don't ask)which turned out to be chilli)and a few other things that I cant remember...Enough for two plates each for 3 men...And plates were cleared both times!!

We returned the favor when Torque and family arrived the other week....Again all plates cleared!!

I think this is going to be used again on my main hols...Very tasty and filling...Just the job after a long day sat at a campfire...

Chorizo sausage peppers and passata with ready cooked pasta is a favourite here and also the corned beef hash with tinned new potatoes.

Today it is Shepherds Pie with yesterdays left over joint. I will be making enough for the two of us plus two more portions in those tin foil dishes. The dishes then go into the freezer. By the time we get to our CL next week they will have thawed out ready to heat up and, hey presto, dinner is served.

daveslisa, thanks for that link! We're off camping on thu so just stocked up.... 18meals for 34 quid - if you spend 40 you get free delivery and 10% off then I got another 10% 'cos it was my first order. brilliant! (they last for a year at room temp so I figured we'll get through them)

Just had a look as well,going to do the same as we have 2 music festivals next month so they will be perfect.spend less on food at the festivals so more to spend at the mojito bar

Another big vote for the "Look What We Found" range - we particularly like the meatballs and the tomato soup.

Also quite like the Striped Box Foods but the disadvantage is you have to buy a whole box of one item. I managed to buy a mixed box last year with just 2 of each of 5 dishes in.

My boys also like tinned chicken in white sauce served with rice and crusty bread followed by jelly and Angel Delight for pudding!

Cheese and corn risotto:

Melt a knob of butter in a big pan. Throw in some long grain rice and chopped onion and sizzle a bit, add chicken oxo stock, simmer for 15 mins or until rice soft, chuck in a can of sweetcorn and when all nice and hot add small cubes of cheese (any sort but red leicester makes it more colourful) then serve quickly. The cheese should be gooey, not melted away.
