I admit we don't have the expense of taking child(ren), and aren't exactly on a budget, but more often than not, we now don't take the cooker, cooker stand, pots/pans, gas bottle, dining table etc. We use EHU (I guess we could leave some battery lights etc behind too... but take them just in case!) so just take a kettle and occasionally a sandwich toaster. We survive at the tent with toasted sandwiches on arrival day, then cup-a-soups, pot pastas, instant porridge etc. We spend a fair amount of time off site, and eat out, when the fancy takes us. Different when kids are involved, I appreciate, but thought it worth a mention.
We are pretty much the same, tend to be more out and about on shorter trips and more lounging around camp on longer trips.
We went down the route of choosing a quick to pitch tent, which does us for everything and just alter what we take with us, depending on the level of comfort we need.
