Two weeks ago had a mole who made a couple of mounds outside. We did hear him though, I think inside the tent, but OH said it was outside.
When we lifted the ground sheet there were obvious tracks where he'd been under the tent .... and OH said he hadn't been inside?! pftt
We did have a little mouse when we were in France once, but he was wise and did actually keep out of the tent!
We always try to put food away but sometimes mistakes are made...we always think ants....but a rat ugh!

I have a trail cam that I some times take with me when camping. I hate to say...but I have seen them regularly near the tent overnight. I have also seen many birds and hedgehogs etc which are the primary target for capture (photo)
I have had a few run ins with the local wild life taking up residence under my tent these past two years Mainly voles and fieldmice and this after years (to my knowledge) of never having any problem with them before then....
Have had free range chickens and robins/chaffinches etc hop into my tent for a clear up of any spilled crumbs which somehow seems acceptable and part of the camping experience if you know what I mean....Wild rats are a different proposition entirely....Totally unacceptable in my book
The other week when I lifted Sig and footprint I had 25 snails with the most vivid shells I have ever seen on them....
I was also woken one morning by a lamb who had got over the surrounding fence into the campsite...And started bleating for her/his mum about 6 inches from my head one morning at 6am!!! That got Jelboys tired old pulse beating a bit faster that morning!!!... But again all seemed part of the overall experience...
Worst one ever was a resident Peacock who had roosted on the roof line of my old frame tent one night and decided to greet the rising sun in traditional manner at 4am...The 7 human occupants of the tent shot bolt upright as one....And I swear if my BIL had caught it there would have been Peacock on the BBQ that night.....LOL!!

Not actually inside but camping as a child in a ridge tent in a farmers field,
I was woken up by a cow scratching his neck on the spike on top of one of the upright poles.
On another occasion, my mate's dad had a smallholding & my mate had a pet sheep which he'd hand-reared. We were camped in a ridge tent in the field next to it and Betsy, which used to get jealous of any of my mate's friends (used to butt them up the jaxy!) escaped into our field and woke us by rolling onto my side of the tent right where I was lying. Interestingly the tent, a heavy old Lichfield cotton canvas ridge tent with bell end, survived the ordeal with nothing more than a few muddy marks.
Never had a rat, but Mr Fox came calling when we stayed at Pool Bridge in Somerset last year. We had been warned to watch out for "ninja" squirrels so had made sure all our food was all packed away in our cool box. But, on the way back from a night time visit to the toilet block we saw Mr Fox acting all shifty near our awning (no SIG)....turns out he was after our paper serviettes which (cos I personally don't consider them food) I hadn't packed away.
